Avo and egg bagel

Ingredients
- 1 H&B bagel
- 1 ripe avocado
- 1 lime, squeezed
- 1 teaspoon chili flakes
- 1 tablespoon H&B chia seeds
- 1 handful of baby spinach
- 2 tablespoons H&B green sauce , diluted with 1 teaspoon water
- 2 eggs
- splash of vinegar
Method
- Take the avocado, cut it in 1/2 and scrape the pulp into a bowl.
- Add the chili flakes, lemon juice and seeds to the avocado. Mash with a fork and set aside.
- Add the vinegar to a pot of boiling water and carefully crack the eggs directly into the water.
- Poach the eggs for 4 minutes or until the whites are set.
- Meanwhile, cut the bagel in half and toast until golden.
- Lightly blanch the spinach in boiled water and squeeze out any excess water.
- Assemble by placing 1/2 bagel on 2 plates, pour over avocado, top with drained spinach and a poached egg. Drizzle over the green sauce and enjoy!
