Avo y bagel de huevo

A fun twist on classic eggs benedict, this is a light, protein-rich option. With 12 plant points , this will leave you feeling satisfied and ready for the day!

Ingredients

  • 1 H&B bagel
  • 1 ripe avocado
  • 1 lime, squeezed
  • 1 teaspoon chili flakes
  • 1 tablespoon H&B chia seeds
  • 1 handful of baby spinach
  • 2 tablespoons H&B green sauce , diluted with 1 teaspoon water
  • 2 eggs
  • splash of vinegar

 

Method

  1.   Take the avocado, cut it in 1/2 and scrape the pulp into a bowl.
  2.   Add the chili flakes, lemon juice and seeds to the avocado. Mash with a fork and set aside.
  3.   Add the vinegar to a pot of boiling water and carefully crack the eggs directly into the water.
  4.   Poach the eggs for 4 minutes or until the whites are set.
  5.   Meanwhile, cut the bagel in half and toast until golden.
  6.   Lightly blanch the spinach in boiled water and squeeze out any excess water.
  7.   Assemble by placing 1/2 bagel on 2 plates, pour over avocado, top with drained spinach and a poached egg. Drizzle over the green sauce and enjoy!
